Between the Ocean and the Sea

“I’m a slight control freak,” Rory Lancellas tells me. He’s well known for his modest manner but even for him, this is an understatement. Rory launched Aegir Project Independent Brewery in 2015 in Noordhoek, a particularly laid back suburb of Cape Town, South Africa. It would be two years before he hired anyone to assist him, partly because he’s such a stickler for things to be done so perfectly he couldn’t imagine passing any part of the process—from milling grain, to serving, to washing the glasses—to anyone else.
